1. Schedule Them
Make sure that you're doing them at the same time every single day to ensure that they won't get forgotten.
2. Record Them Consistently
What we mean by this is that when you decide how you're going to record them, whether it's on paper or an app (like FreshCheq), stick to it! Don’t do it on paper one day, use an app the next day, and record on a computer next week. Track it all in one place.
3. Assign Them to the Right People
Assign your line checks to the right people, whether it's your kitchen manager, your AM's or the GM themselves doing it. Obviously, you want people you can trust to execute these tasks every single day with direct supervision.
4. Split Up the Tasks
When possible, split them up. Have one person tackle a section of the line rather than a single person doing the entire thing by themselves. It'll get done a lot faster. It'll turn a 40-minute task into an eight-minute task and it'll be a lot more efficient. This also allows more people to get involved with expanding the knowledge and expertise of the team.
5. Take Corrective Actions
Make sure that you're performing your corrective actions and follow-ups on failed items to ensure that any issues are taken care of. For example, if the lettuce is too warm, make sure that that gets fixed so it doesn’t happen again. It'll really help you out with running an efficient and safe restaurant.
